Cucumber + Dill Salad

Sharing a family recipe with you that is inspired by my grandmother! There are two tricks to this dish that make it fabulous. First, sprinkle the cucumber and onion slices with salt and allow the vegetables to soak in the salt for 10 minutes. Then, rinse the salt off the veggies with cold water. This will soften the vegetables while maintaining their crunch. Second, it’s important to use fresh dill (and lots of it!). You can’t beat that fresh, herby, summer flavor!

Ingredients Method

  • 2 medium cucumbers, thinly slices

  • 1 medium sweet onion, peeled & thinly sliced

  • 1/2 cup salt, to cover vegetables (will be rinsed off)

  • 1/2 cup rice vinegar (can sub white vinegar)

  • 3 tablespoons red wine vinegar (can sub white vinegar)

  • 1/4 cup water

  • 1/2 cup fresh dill

  • 2 tablespoons granulated sugar

  • 1/2 tsp salt

  • 1 tsp freshly ground black pepper





  1. Place sliced cucumbers and onions in a colander and mix with 1/2 cup salt. Allow vegetables to soak in salt for 10 minutes. After 10 minutes, thoroughly rinse salt off of vegetables with cool running water.

  2. Place rinsed off cucumbers and onion sliced in a large mixing bowl and set aside.

  3. In a small bowl, mix rice vinegar, red wine vinegar, water, fresh dill, sugar, 1/2 tsp salt and black pepper together.

  4. Pour vinegar mixture over sliced vegetables in large mixing bowl. Toss veggies with tongs to evenly coat with vinegar mixture.

  5. Serve immediately or store in the fridge overnight, allowing flavors to develop and serve the following day.
