Fresh Corn Coleslaw

A crunchy, fresh, summer salad that is great for picnics and barbeques. Feel free to throw in a third jalapeño if you’re like me and enjoy that extra kick. This coleslaw is an awesome meal prep choice because it gets more flavorful each day!

Ingredients Method

  • 1/2 head of green cabbage, finely chopped

  • 4 ears of corn, kernels removed from cob

  • 1 cup cilantro, leaves and tender stems, finely chopped

  • 4 green onions, thinly sliced

  • 1 -2 jalapeños, finely chopped

    *For the Dressing*

  • 3/4 cup vegan mayo

  • juice of 1 lime

  • 2 tablespoons grainy Dijon mustard

  • 2 cloves garlic, grated

  • 1 tablespoon maple syrup

  • 1/2 teaspoon Kosher salt

  • 1/4 teaspoon black pepper







1. Combine all chopped ingredients in a large bowl.

2. Separately, combine all ingredients for the dressing in a small bowl and mix until well combined.

3. Add the dressing to the salad and combine until evenly mixed.
