Fresh Oregano + Garlic Bruschetta

This is a fresh oregano bruschetta that is delicious on rustic Italian bread. I love to serve it as an appetizer or smear it on sandwiches. 

Ingredients

  • 1/2 cup good quality extra virgin olive oil + more for garlic

  • 1/4 cup fresh oregano, chopped

  • 1 bulb of garlic

  • 1/2 teaspoon salt + more for sprinkling

  • 1/4 teaspoon freshly ground black pepper + more for sprinkling

  • rustic Italian bread













Method

  1. Preheat oven to 400F.

  2. Slice off the head of the garlic bulb. Drizzle garlic bulb in olive oil and sprinkle with salt and pepper. Wrap garlic bulb in foil and roast in the oven for 40 minutes.

  3. Allow garlic to cool slightly and squeeze out cloves. Mash up the garlic cloves and combine with the remaining ingredients in a bowl.

  4. Spread on toasted bread or a sandwich.
