Pasta with Peas + Fresh Herbs

Fresh herbs, good quality olive oil, and a squeeze of lemon juice create a quick and tasty summer pasta dish. Top it off with some aged Parmigiano Reggiano for that savory kick and you’ve got the perfect dish for your summer picnic.

Ingredients Method

  • 16oz pasta of your choice

  • 3 cloves of garlic, chopped

  • 1/2 cup frozen peas, thawed

  • 1 cup snow pea, trimmed

  • 2 tablespoons chives, chopped very small

  • 2 tablespoons fresh oregano, chopped very small

  • ½ cup fresh basil, chopped very small

  • ½ cup good quality olive oil

  • Salt and freshly ground black pepper to taste

  • Fresh lemon juice, for serving

  • Parmigiano Reggiano, for serving









1. Boil water for the pasta and season generously with salt and a little olive oil. Begin cooking pasta.

2. Add olive oil and garlic to a large sauté pan and slowly increase heat to medium. This will allow the garlic to become chewy and caramelized. Once the garlic is light brown in color and fragrant, add snow peas, frozen peas, and a 1/4 cup of water to the pan. Cook at medium heat for about 2-3 minutes.

3. Once the pasta is almost done cooking, remove 1/2 cup of pasta water and set it aside. Drain the pasta and add it to the pan with the peas. Add chopped herbs and pasta water. Stir on medium heat for 1 minute.

4. Remove from heat and add olive oil, and lemon juice. Season with salt and pepper to taste.

5. Serve with parmigiano Reggiano.
